Two-tone Caramel Ermine Icing
An Ermine Icing is an icing with a cooked flour base. It is less sweet, very smooth and fluffy but also very stable. Try this caramel version.
Two-tone Caramel Ermine Icing
A less sweet icing that is smooth and light
Ingredients
- 1 cup milk
- 1 cup sugar
- 5 tbsp flour
- 1 cup butter cut into squares
- 1 tsp vanilla essence
- 1 tin caramel treat
Instructions
- Mix the milk, sugar and flour in a saucepan until smooth. Place over a low heat, whisking all the time to prevent any sticking, bring the mixture to the boil. Set the flour mixture aside to cool.
- Whip the cooled flour mixture with the butter, adding a few blocks at a time until it is all incorporated. Add vanilla. The mixture should be thick and very airy.
- Remove the caramel treat from the tin and mix until smooth.
- To create a two-tone piping for cupcake fill one side of the bag with the caramel and the other side with the ermine, and pipe as normal.
