Blueberry Tart

This is the quickest tart I have ever made, everything is mixed in the blender (I used a Nutribullet), ensuring it’s ready to devour in just about 30 minutes. Ingredients
  

Oreo crust

  • 2 packs Oreos or similar cookies
  • 50 g butter melted

Filling

  • 10 g gelatine
  • 60 ml cold water
  • 15 ml honey
  • 80 ml sweetened condensed milk
  • 250 g blueberries or any berry
  • 250 ml cream

Topping

  • additional whipped cream and berries to decorate optional

Instructions
 

To make the crust

  • Crush the Oreos and mix with melted butter
  • Line a 20cm pie dish with the Oreos, pressing down with the back of a spoon (or bottom of a glass) and set in the fridge for the next step

Make the filling

  • Place the gelatine and cold water in a microwavable bowl and leave to "bloom"
  • In a blender, place the honey, condensed milk and fruit and blend until smooth.
  • Microwave the gelatine and water until melted (about 30 seconds). Add the melted gelatine to the blender and blend again briefly,
  • Add the cream to the blender and pulse until the mixture starts to thicken. (Do not over mix or your cream might turn to butter)
  • Pour the mixture into the base and set for a few minutes in the fridge.
  • Decorate the top with fruit and/or cream as desired.
  • Can be served immediately or set overnight for a firmer pie.
