Ingredients
  

For the cake

  • 2 eggs
  • ¾ cup sugar
  • 1 tsp vanilla essence
  • ½ cup oil
  • cup flour
  • tsp baking powder
  • ½ tsp salt
  • ½ cup buttermilk
  • 5 drops green colouring gel or colour of your choice

Cream Cheese Icing

  • 250 g butter room temperature
  • 250g g cream cheese
  • 4 cups icing sugar
  • 5 ml vanilla essence or lemon juice

Instructions
 

For the cake

  • Preheat the oven to 180°C. Prepare 2x 15cm cake tins by greasing well with butter or cooking spray.
  • Beat the eggs, vanilla and sugar until thick and foamy with an electric mixer.
  • Mix in the oil. Sift together the dry ingredients and fold into the egg mixture.
  • Fold in the butter milk and add desired colour.
  • Divide the mixture evenly between the two tins and bake for 20 - 25 minutes.
  • Check that it is cooked through by piercing it with a skewer or knife. If it comes away clean it is cooked through. Set aside to cool completely before icing.

For the icing

  • Beat the butter and cream cheese until light and fluffy.
  • Beat in the icing sugar and flavouring (vanilla or lemon juice).

Notes

This recipe makes a small 15cm cake but can be doubled to make a larger 20cm cake.
