A simple, delicious velvet cake that can be make ANY colour!
Ingredients
For the cake
- 2 eggs
- ¾ cup sugar
- 1 tsp vanilla essence
- ½ cup oil
- 1¼ cup flour
- 1½ tsp baking powder
- ½ tsp salt
- ½ cup buttermilk
- 5 drops green colouring gel or colour of your choice
Cream Cheese Icing
- 250 g butter room temperature
- 250g g cream cheese
- 4 cups icing sugar
- 5 ml vanilla essence or lemon juice
Instructions
For the cake
- Preheat the oven to 180°C. Prepare 2x 15cm cake tins by greasing well with butter or cooking spray.
- Beat the eggs, vanilla and sugar until thick and foamy with an electric mixer.
- Mix in the oil. Sift together the dry ingredients and fold into the egg mixture.
- Fold in the butter milk and add desired colour.
- Divide the mixture evenly between the two tins and bake for 20 - 25 minutes.
- Check that it is cooked through by piercing it with a skewer or knife. If it comes away clean it is cooked through. Set aside to cool completely before icing.
For the icing
- Beat the butter and cream cheese until light and fluffy.
- Beat in the icing sugar and flavouring (vanilla or lemon juice).
Notes
This recipe makes a small 15cm cake but can be doubled to make a larger 20cm cake.
